Another big day at Summit Farmers Market inspired a big sandwich.
2 slices of whole grain bread
1/2 avocado peeled and sliced
1 garnet carrot, shredded
A few leaves of assorted salad greens and arugula
Hummus
A handful of cherry tomatoes, quartered
A generous pinch of sea salt
Slather one slice of bread with hummus, then layer on the carrots gently pushing them down to stick to the hummus below. On the other slice layer your greens and avocado. Add any veggies you’ve got laying around, sprinkle with sea salt or lemon juice or both! Carefully flip one side down onto the other, slice in half, and gobble it up.
